Spring has sprung and so has a new seasonal menu at Fratelli Fresh! The team at Fratelli Fresh have refreshed their dishes with a bounty of spring produce.
The Fratelli Fresh’s new menu items will be splashed with light vinaigrettes, zested with lemon, sprinkled with fresh herbs. These delicious new meals will take pride of place alongside Fratelli Fresh’s classic and signature dishes.
New spring additions at Fratelli Fresh will freshen up each section of the menu. This includes antipasti of burrata scattered with purple baby beets, strawberries, balsamic and pistachios, crispy school prawns with smoked paprika aioli and tuna tartare with avocado mousse, topped with shaved cucumber.
The new pizzas at Frattelli Fresh will showcase local produce, including Vannella cheese and cured meats from Salumi Australia. The beautiful spring garden pizza has a white base of oozy goats’ cheese and fior di latte. It includes a colourful combination of baby carrots, asparagus, cherry tomatoes and herbs. Pork and fennel sausage pizza features friarielli, garlic and chilli.
The pasta at Fratelli Fresh, too, is getting a bit of spring pizzazz. They now have creamy risotto with mascarpone and pecorino, garnished with crunchy, shaved asparagus. There is a naughtiness to the house-made gnocchi, with spicy nduja and stracciatella melted through the tomato and basil sauce, which adds a blissful, zingy bite.
Zoodles, or zucchini noodles — a healthy, gluten-free option — are making their debut at Fratelli Fresh. Most pastas on the menu can be substituted for zoodles for only an extra $2. Guests can choose zoodles with their lamb ragu, or even zoodle bolognese in an on-going spiral of springtime.
On the mains section, lamb rump is complemented by smoked eggplant puree, green beans and pomegranate. Veal Milanese is served with spaghetti pomodoro.
Lamb also features in a salad alongside a generous combination of baby spinach, farro, baby cos, radicchio, chick peas, pomegranate and pecorino, all possible thanks to the arrival of spring. Fratelli Fresh’s raw spring vegetable salad bursts with shaved fennel, radish and beetroot, sliced asparagus and snowpeas, as well as having a splash of fresh herbs.

The new dishes are available at all Fratelli Fresh restaurants, which are located at Alexandria, Bridge Street, Crows Nest, Darling Harbour, Entertainment Quarter, Macquarie Street, Walsh Bay and Westfield Sydney.
