The results are in – and Australia’s first domestic blast chiller is a hit.
Australia’s first ever domestic blast chiller, developed by Smeg and already the recipient of two international design awards, has gained big ticks of approval from home cooks and entertainers.
Since launching in September last year, the multi-function blast chiller has been used by chefs, cooks and avid home entertainers, who found it delivered a level of home cooking, storage and preservation of food never before attained in a domestic setting.
The Dolce Stil Novo Blast Chiller has eight distinct functions, including rapid deep freezing, quick, even thawing, low temperature cooking, delay start programming and temperature holding. The appliance also has fast beverage chilling, proving and sanitising modes.
Stand out features, as nominated by users, include its low temperature cooking and gentle defrosting. Dishes such as Beef Wellington and no-churn ice cream have been used to demonstrate to enthusiastic consumers and retailers around the country the appliance’s ability to produce restaurant quality food even when the dish has been frozen and stored prior to cooking.
Apart from producing high quality results, the appliance’s ability to freeze, store and preserve food without any change in the texture, taste and colour is a level of technological expertise never seen before.
A beef fillet, cooked to perfection with a consistent tenderness and colour throughout the entire fillet, showcased just a few of the Blast Chiller’s talents.
The Beef fillet was cooked using the Blast Chiller’s low temperature automatic programme for roast beef.
Meanwhile, a prepared Beef Wellington, which had been frozen using the rapid freeze mode (to -35˚C), was thawed after six weeks using the appliance’s low, gentle thaw mode – which took three hours. After cooking (in Smeg’s Dolce Stil Novo steam assist oven), the results were exactly the same as the freshly prepared dish – in colour, texture and taste.
The Blast Chiller also produces a superior ice cream – using its Automatic Ice Cream function – which requires no churning and is devoid of any ice crystals.
Rodney Manauzzi, Smeg’s national training manager, has been demonstrating the unique Dolce Stil Novo Blast Chiller around the country and has noticed a lot of excitement and engagement coming from consumers and retailers.
“This is an entirely new concept in professional food preparation, preservation and storage in the home,” Manauzzi said. “No one ever truly understands the full scope of this appliance until they see it in use. It is far more than a Blast Chiller, but most importantly it delivers the ability to freeze, store and preserve food without altering the flavour, the texture or the colour of the food. Most people sum up their feelings at the end of the demonstration in just three words – ‘I want one!’”.
