What makes the perfect brunch? Beautiful food, of course. Good friends, fun conversation, and a stunning setting don’t hurt. A menu designed and catered by an Australian-renowned chef. While this brunch sounds like the brunches of that you need to book weeks in advance, you can find this graceful morning event right in Sydney at the Glass Brasserie in Hilton Sydney.

The Glass Brasserie is hosting a new and intriguing event, Sunday Brunch with Luke. If you haven’t heard of it before, the Glass Brasserie is an upscale, yet modern restaurant located on the second level of the Hilton Hotel. Nestled in the Sydney CBD, the Glass Brasserie hosts multiple events and food experiences, ranging from a Melbourne Cup inspired event to their new brunch with Luke. 

Luke Mangan is an Australian chef who designs and creates extraordinary menus that change the foodscape of Sydney. He is the head chef of the Glass Brasserie and has created the Sunday Brunch with Luke, where he has released an exciting new menu for brunch that is elegant, yet surprisingly affordable.

Available every Sunday from 11:30 to 3:30, the Sunday Brunch with Luke is a simple event that spans over two hours, including a magnificent five-course menu designed by Luke himself. The menu is a sharing platter, that combines elegant tastes with whimsical designs, mixed with a fresh seafood motif. The five courses open with simple salmon rillettes topped with pickled cucumber and crumpets. The mixture of the tart pickled cucumbers with the refreshing salmon is to die for. Next on the agenda comes gorgeous looking zucchini flowers, topped with whimsical beetroot hummus, corn, and soft herbs. The best part of this course is the explosion of the bitey gorgonzola. The third course is a surprising trip to Japan, with a crab omelette, okonomiyaki, bonito flakes with nori, and Japanese mayonnaise. The colours that come with this course are photo-worthy and feels like you’re an important lunch meeting with high society.

Finally, the last of the savoury courses is a familiar, yet inspired dish of spatchcock, pancetta, sage, parmesan, and carrot. This succulent meal has a home-cooked feel and is a warm reminder after such exotic tastes.

We end the two-hour occasion with a sweet finale: a key lime pie topped with fluffy meringue and a crumbly, biscuit base. This key lime pie is a perfect way to finish such a rich and savoury brunch, as it’s light enough not to push your stomach to its limit.

If this extravagant menu isn’t enough to satisfy you, the two-hour seating includes a 2hr bottomless Aperol Spritz and/or French Rosé. For a little bit more, you can order a plate of oysters for an additional price.

If these delicious-sounding courses can’t convince you, then the two hours’ worth of catchup with a loved one just might. With a great atmosphere in the heart of CBD and an extravagant five-course meal, you would expect this brunch to cost your next week’s rent. But don’t fret, this event is only $75 per head, allowing even the money-conscious to splurge a little and experience a taste of elegance. The gorgeous dining room, the ambient music, and the mouth-watering courses, the Sunday Brunch with Luke is a simple, modern, and sophisticated event.
